Today I am going to share How to make Schezwan fried rice with Homemade Schezwan sauce and Panner Manchurian
First, let's see how to make Schezwan sauce

SCHEZWAN SAUCE
                                First, take a bowl and add 10 to 15 deseeded red chilies and soak it in hot water for 20 mins. After 20 mins transfer the soaked chilies into a blender jar and add the water and blend it to a paste. Heat a pan and add 1/4 cup oil, add 4 tbsp finely chopped garlic cloves, 2 tbsp finely chopped ginger, and saute well. And then add the grounded chili paste and saute well in medium flame for 10 mins or until the oil separates. After it is cooked well add 2 tbsp tomato sauce, 2 tbsp vinegar, 2 tbsp soya sauce, 1/4 tsp crushed pepper, required salt, 3/4 tsp sugar, and cook for 1 min in medium flame. After the sauce gets thick consistency. Allow it to cool and transfer into a glass jar and store in the refrigerator. Next, let's see how to make fried rice using the homemade Schezwan sauce.

SCHEZWAN FRIED RICE
                           First, take a bowl and add 3 cups of basmati rice rinse and soak it in water for 30 mins. Next, boil 10 cups of water in a large pot. when the water begins to boil add 1 tsp salt and 1 tsp oil allow it to boil well, and then add soaked basmati rice and cook the rice in medium flame. Do not overcook. After the rice is cooked up to 80% turn off the flame. Drain the rice immediately to a colander and keep it aside.
                          Heat 2 tbsp oil in a pan and add 2 thin-sliced garlic cloves and saute well. Add 2 tbsp finely chopped spring onion, half finely chopped onion, and saute well. And then add 1 chopped carrot, 1/2 chopped capsicum, 5 chopped beans, 5 sliced mushrooms, a handful of cabbage, add required salt and saute all the vegetables well in high flame. After that add 2 tbsp soya sauce, 1 tbsp vinegar, 2 tbsp Schezwan sauce, and stir fry in high flame. Finally, add 3 cups of cooked basmati rice, 1 tsp pepper powder, required salt, and mix gently in high flame.

PANEER MANCHURIAN
                                    Take a bowl and add 2 tbsp all-purpose flour or wheat flour, 2 tbsp cornflour, salt to taste, 1 tbsp red chili powder, a pinch of turmeric powder, and add water little by little and mix well. make the batter slightly thicker and add 200 grams of cubed paneer and mix well. Heat a pan and add 3 tbsp oil and add the marinated paneer and fry until golden brown. After that transfer it to a plate and keep it aside. Now heat a pan and add 2 tbsp oil, 10 finely chopped garlic cloves and saute it for 20 seconds, after that add 1 sliced onion and 1 capsicum and saute it well. Next, add 2 tbsp red chili sauce, 2 tbsp tomato ketchup, 1 tbsp soya sauce, and cook it for 1 min on medium flame. Take a small bowl and add 2 tbsp of cornflour and 2 tbsp of water and mix well, add the mixture into the pan and mix well. Add the paneer and mix well and cook for 1 min on low flame. At last, add few finely chopped coriander leaves and spring onion leaves and mix well. Paneer Manchurian is ready.
